Frijoles de Barracho

My Mexican friends tell me these beans are better than their mama's! To cook on the stove top instead of slow cooker, cook with covered lid over medium to medium-high heat for about 2 hours and increase water to 7 C (checking to see if more water needs to be added during cooking).

Ingredients

  • 2 C dry pinto beans, rinsed

  • 1 12-oz can beer (or sub with 1½ C water)

  • 4 C chicken broth

  • 3 C water

  • 1 bay leaf

  • 1 jalapeno, diced

  • 1 onion, diced

  • ½ C cilantro, chopped

  • 4 garlic cloves, minced

  • 3 roma tomatoes, diced

  • 5 slices cooked bacon, chopped

  • 1 T reserved bacon grease

  • 1 t salt

  • 1 t black pepper

  • 1 t oregano

  • 1 t cumin


Preparation

  1. Combine all listed ingredients above into slow cooker. Stir to combine. Cover and cook on high for 8 hours.
