Pineapple Chicken

This is a quick and simple weeknight dinner consisting of only a few ingredients you probably already have! Serve alongside veggies and either pasta or rice.

Ingredients
2 large chicken breasts, halved
½ c barbecue sauce
2 c fresh or canned pineapple chunks
½ red bell pepper, thinly sliced
1 T soy sauce
½ t salt
¼ t black pepper
3 T brown sugar
1 T worcestershire sauce
Preparation
With the 2 chicken breasts now halved, you should have 4 thinner cutlets. Spread the barbecue sauce on all sides, then sprinkle the salt and pepper on both sides. Lay on a baking sheet lined with either parchment paper or aluminum foil.
Preheat oven to 425° F.
In a small bowl, mix together the soy, worcestershire, and brown sugar until well combined. Arrange pineapple and bell pepper on top of each cutlet and then pour sauce over them to ensure they evenly coated.
Bake for 20 minutes.
