Roast Beef (deli style)

This recipe makes for an absolutely delicious thinly sliced roast beef for sandwiches. It's best to refrigerate the roast beef until completely cold - it will make carving the slices thinner a lot more easy.

Ingredients


  • 2 ½ boneless beef top loin roast

  • 2 garlic cloves, finely minced (2 t)

  • ¼ onion, grated (about 2 t)

  • 2 t extra-virgin olive oil

  • 2 ½ t salt

  • 2 t freshly cracked black pepper

  • 2 t fresh rosemary, chopped


Preparation

  1. In a small bowl, combine the garlic, onion, salt, pepper and rosemary until well incorporated a paste has formed.

  2. Spread the paste all over the beef, cover loosely with plastic wrap, and refrigerate for at least 3 hours (preferably overnight).

  3. Prior to cooking, remove the beef and allow to come back up to room temperature (about 30 minutes).

  4. Preheat oven to 325° F.

  5. Place beef on a wire rack inside of a baking sheet and cook for 85 - 95 minutes for rare / medium rare.

  6. Let cool completely before placing in refrigerator. Slice and serve!
