Mexican Picadillo

This is a classic Mexican taco or enchilada filling - the spices may sound like a lot, but the potatoes and ground beef really soak up all the flavors.

Ingredients


  • 1 lb ground beef

  • 1 T vegetable oil

  • 1 large potato, diced

  • 1 jalapeno pepper, diced

  • 1 yellow onion, diced

  • 3 cloves garlic, diced

  • 2 roma tomatoes, diced

  • 1 t salt

  • 1 t freshly ground black pepper

  • ¾ C beef stock

  • 1 ½ T paprika

  • 1 T cumin

  • 1 ½ T oregano


Preparation

  1. In a large skillet with a lid, add oil and potato, garlic, onion, and jalapeno pepper. Gently saute over medium high heat for about 5 minutes.

  2. Add ground beef and continue cooking until the beef is almost completely browned.

  3. Next, add oregano, cumin, paprika, salt, pepper, and tomatoes. Cook for 2 minutes.

  4. Finally, add beef stock and stir well to combine. Cover and cook on medium low heat for 20 minutes or until almost all the liquid has evaporated.

  5. Serve warm with either corn or flour tortillas and your favorite salsa!
