Barbecue Pulled Pork

This is a recipe from my brother-in-law Jeff that I have adapted slightly over the years. Be patient with it because it will need the time in the slow cooker, but is so worth the wait. Serve on buns with coleslaw, onions, dill pickles, and potato salad for a real down-home Southern treat!

Ingredients
1 (2-lb) pork butt or pork shoulder
1 (12-oz) can lemon-lime soda
½ onion, chopped
2 cloves garlic, minced
1 C water
1 (12-oz) bottle barbecue sauce of your choice
2 t salt
1 apple, diced
Preparation
Place apples, onion, garlic, salt, water and lemon-lime soda into slow cooker.
Add pork on top of mixture. Make sure pork is almost fully submerged in liquid before placing on lid.
After 6 hours, remove lid and use either 2 forks or tongs to shred the pork inside the slow cooker. Add the barbecue sauce and stir everything together well, set temperature to high, cover, and cook for another 30 minutes until everything is warmed through.
