I can't easily source pancetta here in Mexico, so thick-cut bacon does quite nicely as a substitute.

10 minutes

Ingredients

  • 1 lb spaghetti

  • 4 eggs, beaten

  • 2 cloves garlic, minced

  • ½ lb thick-cut bacon (or pancetta), diced

  • ¼ C pasta water (reserved)

  • 1 T salt

  • ½ t freshly ground black pepper

  • 1 C grated parmesan cheese

  • 2 T fresh parsley, chopped

Preparation

  1. Add 1 T salt to a medium-sized pot of water, and bring to a boil over medium-high heat. Add spaghetti and cook for approximately 10 minutes.

  2. Meanwhile, fry the bacon in a large skillet over medium heat until nearly done, approximately 5 - 8 minutes. Add the 2 minced garlic cloves and cook for 1 additional minute. Turn off the heat.

  3. Using tongs, place the cooked spaghetti into the large skillet with the bacon and garlic. Add the 1 C of grated parmesan cheese, ¼ C reserved pasta water, 4 beaten eggs, and ½ t black pepper. Stir continuously until the sauce becomes creamy and everything is well incorporated. Serve immediately and garnish with the 2 T chopped parsley.
