Shrimp Scampi

This is a go-to for a quick weeknight dinner with very little prep and cook time. I like to buy the large shrimp (either 16/20 or 20/25), but you can use whatever type you like.

Ingredients

  • 1 (8-oz) package angel hair pasta

  • 2 T fresh parsley, chopped

  • 1 stick butter (½ C)

  • 1 lb raw shrimp, peeled and deveined (thawed if from frozen)

  • 5 cloves garlic, minced (5 t)

  • Pinch of red pepper flakes

  • ½ t salt

  • ¼ t freshly ground black pepper

  • 1 C dry white wine

  • 1 C parmesan cheese, grated

  • 1 T lemon juice (from ¼ lemon)

  • Lemon slices from remaining ¾ lemon


Preparation

  1. Bring pasta to a boil with salted water in a large pot over medium heat and cook for about 4 - 5 minutes; drain water and set aside.

  2. In a large skillet, add butter and olive oil and cook over medium heat until butter has melted. Add shrimp and cook for about 4 minutes until almost finished cooking (not opaque and slightly turning pink).

  3. Add white wine, salt, pepper, parsley and lemon juice and bring to a low boil; only cook for 30 seconds after the boil has started (otherwise, shrimp will overcook) - then off the heat.

  4. Immediately pour over the cooked angel hair pasta and toss well to combine. Top with parmesan cheese and serve immediately.
