Angel Hair Pasta with Capers

Our good friend JD came up with this recipe that I modified slightly. You can add a protein of your choice to make this meal even more complete - shrimp, beef, chicken, pork, etc.

Ingredients


  • 1 (8-oz) package angel hair pasta

  • 3 T capers

  • ½ lemon, cut into slices (for garnish)

  • ½ C parmesan cheese, grated

  • 1 t garlic powder

  • 2 C chicken broth

  • 2 C water

  • ¼ C extra virgin olive oil

  • ½ t freshly ground black pepper


Preparation

  1. In a medium-sized saucepan, bring chicken broth and water to a boil over medium heat. Add pasta and cook uncovered until al dente, approximately 8 minutes.

  2. Drain pasta water, and add olive oil, capers, garlic powder, and black pepper. Stir until well combined. Top with parmesan cheese and serve.
