No-Bake Peanut Butter Oatmeal Cookies

Another wonderful holiday dessert recipe from Spencer's mom, Jody. Very simple to make, and I have also included the chocolate version in this recipe.

Ingredients


  • 1 stick butter

  • 2 C granulated sugar

  • ½ C crunchy peanut butter

  • ½ C whole milk

  • 3 C rolled or instant oats

  • 1 t vanilla


Preparation

  1. In a medium-sized saucepan, bring butter, sugar, peanut butter and milk to a rolling boil over medium-high heat.

  2. Add oats and vanilla and continue cooking for 3 minutes after the rolling boil has started, then off the heat.

  3. Immediately drop by heaping tablespoonfuls onto a plastic pastry sheet or aluminum foil. Allow to cool completely and store at room temperature in a plastic contained.

  4. To make the chocolate version of these cookies, simply substitute ½ C of powdered cocoa for the peanut, and follow same steps above.
