Key Lime Pie

Ingredients


  • 1 unbaked pie crust

  • 3 eggs, separated

  • 1 (14-oz) can sweetened condensed milk

  • ½ C lime juice (about 4 fresh limes)

  • ½ t cream of tartar

  • ⅓ C granulated sugar


Preparation

  1. Preheat oven to 325° F and lightly grease a 9" pie plate with butter.

  2. In a medium-sized bowl, beat egg yolks and slowly pour in the lime juice and sweetened condensed milk; blend until well combined.

  3. Pour into pie crust and bake for 30 minutes, then remove from oven and increase heat to 350° F.

  4. In a smaller bowl, beat egg whites and cream of tartar, gradually adding in the sugar. Beat for at least 4 minutes until sugar is dissolved and stiff peaks have formed.

  5. Spread the meringue over top of the pie, and return to the oven for 15 minutes and then remove. Enjoy!
