Granny's Pie Filling

This is a great all-purpose pie filling recipe. It took me a week to get this recipe out of my Granny using actual measurements! Still, it calls for 2 "big pinches" of flour.

Ingredients


  • 2 egg yolks

  • 1 pinch of salt

  • 1 C sugar

  • 2 C whole milk

  • 2 big pinches of flour


Preparation

  1. In a cast-iron skillet, bring all ingredients above to a slow boil over medium-low heat. Cook for approximately 10 minutes or so until thickened. Pour into a baked pie shell and bake for 20 minutes until filling is cooked through.

  2. For coconut pie, add 2 C of shredded or flaked coconut.

  3. For chocolate pie, add 3 heaping t of powdered cocoa and an additional cup of sugar.
