These were always such a treat growing up, and I loved watching Granny make them. So versatile - substitute the apples for any of your favorite or in-season fruits and enjoy this Southern delicacy!

Ingredients

  • 1 prepared pie dough

  • 2 apples, peeled and diced

  • ⅓ granulated sugar

  • ¼ C water

  • ¼ t salt

  • ½ t cinnamon

  • 1 stick butter

  • ¼ C vegetable oil

Preparation

  1. In a medium saucepan, cook apples, water, sugar, cinnamon and salt over low heat until apples are tender - about 15 minutes.

  2. Meanwhile, roll out pie dough to about ¼" thick on a floured surface. Using a large glass or small bowl, cut out 8 rounds.

  3. Spoon almost 2 T of the apple filling into the middle of each dough round, then fold to make a semicircle and use the tines of a fork to seal all the edges.

  4. In a cast-iron skillet, melt butter and add oil over medium-high heat. Take a pinch of the dough and drop in the hot butter/oil mixture to see if the temperature is high enough.

  5. Fry the pies in two separate batches, cooking for about 2 - 3 minutes per side before flipping. Remove to a paper-towel lined plate to drain off the excess oil.
