Bourbon Balls

As these are a no-bake dessert, the bourbon doesn't get cooked out - which gives the tasty little desserts quite a punch!

Ingredients

  • 1 C finely crushed vanilla wafers (approximately 25 - 30 wafers)

  • 1 C finely chopped pecans

  • 2 C powdered sugar, divided

  • 2 T unsweetened cocoa powder

  • ¼ C Kentucky bourbon

  • 2 T Karo® light corn syrup

  • ¼ t vanilla extract


Preparation

  1. In a large bowl, combine crushed vanilla wafers, chopped pecans, 1 C of the powdered sugar, and the cocoa powder and stir until well incorporated.

  2. In a separate smaller bowl, stir and combine bourbon and Karo® syrup. Pour into the bowl with the dry ingredients and stir well until combined.

  3. Wrap the bowl with plastic wrap and refrigerate for 2 hours.

  4. Add remaining 1 C powdered sugar into a shallow bowl. Remove bowl from refrigerator, form into balls, and roll into powdered sugar.

  5. These can be stored in the refrigerator, tightly covered, for 2 weeks. Also, these freeze very well for up to 2 months.
