Apple Pie

My Aunt Betty taught me how to make this pie when I was a kid. Still haven't found a recipe I like any better!

Ingredients


  • 2 pie crusts

  • ⅓ C + 1 t granulated sugar

  • ⅓ C brown sugar firmly packed

  • 1 ½ t + ½ t cinnamon

  • ¼ t ground ginger

  • ¼ t nutmeg

  • 7 C of Granny Smith apples, thinly sliced (approximately 7 apples)

  • 1 T lemon juice (approximately ½ lemon)

  • 1 T butter (⅛ stick)


Preparation

  1. Preheat oven to 375° F and lightly butter a 9" round pie plate.

  2. In a medium-sized bowl, toss sliced apples in lemon juice until well coated. Next, sprinkle sugar, brown sugar, and flour over all the apples and toss until everything is evenly distributed.

  3. Roll out one of the pie crusts into a circle on a lightly floured surface, and carefully place in the bottom of the pie plate. Pour in the apple filling and dot evenly with small pieces of the butter.

  4. Now take the second pie crust, roll out into a circle on a lightly floured surface. Use your rolling pin to roll the crust onto the pin, then gently unroll on top the pie. Gently press both crusts together all the way around the edge to seal.

  5. Take a sharp knife and cut 4 or 5 slits into the crust to allow steam to escape during the cooking process. Spring the remaining 1 t sugar and ½ t cinnamon evenly over the top.

  6. Bake for 1 hour - 1 hour 10 minutes until crust has browned nicely. If browning too fast, lightly cover the top with aluminum foil until pie has completed cooking.
