Granny's Goulash

This isn't technically a casserole, but rather a one-pot meal. Hearty comfort food and perfect for both adults and kids!

Ingredients
1 lb ground hamburger
½ onion, diced
4 cloves garlic, diced
½ green bell pepper, diced
7 roma tomatoes, peeled and diced
6 mushrooms, washed and sliced
3 C beef broth
1 C water
1 (210g) container of tomato sauce (about 1 C)
1 T worcestershire sauce
1 t paprika
1 t steak seasoning
1 t salt
½ t freshly cracked black pepper
1 t Italian seasoning
2 (200g) packages of elbow macaroni (about 2 C)
8 cherry tomatoes, halved
Preparation
In a medium-sized saucepan, place roma tomatoes in water, cover with a lid, and bring to boiling over high heat. Once the skin begins to split, remove from the tomatoes from the water and set aside to cool. Once cool enough, peel skins and dice.
In a large pot, add hamburger meat and brown over medium-high heat. Once almost brown, add in onions, bell pepper, and mushrooms and cook for about 5 minutes until onions have turned soft. Add garlic and cook for 2 more minutes.
Add beef broth, water, tomato sauce, worcestershire sauce, roma tomatoes, cherry tomatoes, and elbow macaroni.
Next, add seasonings: paprika, steak seasoning, salt, pepper, and Italian seasoning. Stir well, reduce heat to medium and cover.
Stir occassionally and cook for 10 - 15 minutes until the macaroni is fully cooked and absorbed almost all of the liquid. Remember, you are aiming for a texture that is moist with some liquid, but not soup.
Taste and adjust for seasonings, and serve warm with some crusty bread!
