Chicken Wild Rice & Mushroom Casserole

This is a super simple weeknight dish with basically zero prep time required. Amp it up by adding any of your favorite vegetables to it (broccoli, asparagus, zucchini, etc.)!

Ingredients
4 boneless, skinless chicken thighs
2 boneless, skinless chicken breasts, halved
15 mushrooms, thinly sliced
½ onion, diced
4 C chicken broth
1 t worcestershire sauce
1 t garlic powder
1 t paprika
1 t salt
1 t freshly ground black pepper
½ t dried thyme
2 T dijon mustard
Preparation
Preheat oven to 400° F and lightly grease a 9" x 13" casserole dish.
Generously rub the dijon mustard all over the chicken pieces, and sprinkle salt, garlic powder, paprika, thyme, and black pepper on top.
Add rice, mushrooms, onion, chicken broth and worcestershire into casserole dish and stir to combine. Nestle the chicken pieces evenly within the rice mixture.
Cover with aluminum foil and bake for 45 minutes; remove foil and bake for 15 more minutes or until moisture has evaporated almost completely.
