Chicken Wild Rice & Mushroom Casserole

This is a super simple weeknight dish with basically zero prep time required. Amp it up by adding any of your favorite vegetables to it (broccoli, asparagus, zucchini, etc.)!

Ingredients



  • 4 boneless, skinless chicken thighs

  • 2 boneless, skinless chicken breasts, halved

  • 15 mushrooms, thinly sliced

  • ½ onion, diced

  • 4 C chicken broth

  • 1 t worcestershire sauce

  • 1 t garlic powder

  • 1 t paprika

  • 1 t salt

  • 1 t freshly ground black pepper

  • ½ t dried thyme

  • 2 T dijon mustard




Preparation

  • Preheat oven to 400° F and lightly grease a 9" x 13" casserole dish.

  • Generously rub the dijon mustard all over the chicken pieces, and sprinkle salt, garlic powder, paprika, thyme, and black pepper on top.

  • Add rice, mushrooms, onion, chicken broth and worcestershire into casserole dish and stir to combine. Nestle the chicken pieces evenly within the rice mixture.

  • Cover with aluminum foil and bake for 45 minutes; remove foil and bake for 15 more minutes or until moisture has evaporated almost completely.
