Ingredients
1 ¼ C lukewarm water
1 T sugar
2 ¼ t yeast
¼ C olive oil
3 C all-purpose flour (plus additional for kneading)
2 t salt
Preparation
Combine lukewarm water and sugar in a small bowl and stir until sugar is almost completely dissolved. Sprinkle yeast on top and let rest for about 8 minutes, or until the top is frothy and bubbly.
In a medium-sized bowl, combine flour, salt, and oil and stir until well blended. Pour in yeast mixture and stir until a shaggy dough has formed.
Pour dough out on floured surface and knead for 5 minutes. Form into tight ball.
Pour 1 T of olive oil into medium-sized bowl and place dough ball inside, being sure to coat all sides. Cover tightly with plastic wrap and let rise for 1 ½ hours.
Remove from bowl and divide into two equal portions. You can then either freeze for later use, or use right away.
After covering with sauce, cheese, and toppings, bake in a 450°F oven for 12 - 13 minutes.
