Nothing says southern cooking better than hush puppies - served best with fried catfish and coleslaw, but also fantastic as stand-alone pick-up appetizers!

Ingredients
1 C yellow cornmeal
½ C all-purpose flour
1 t baking powder
1 t salt
1 t baking soda
1 egg
2 green onions, sliced
2 T grated yellow onion
1 t garlic powder
½ t onion powder
¼ t cayenne pepper
1 C buttermilk
Preparation
Whisk together in a large bowl the cornmeal, flour, baking powder, baking soda, salt, garlic powder, onion powder, and cayenne until combined.
In a medium bowl, whisk together egg, buttermilk, green onions, and grated onion until well combined.
Pour the liquid mixture into the dry mixture and stir well. Consistency should be that of a thick pancake batter; adjust wet or dry ingredients accordingly.
Heat 4" of vegetable oil in a large pot or Dutch oven on the stove top until it reaches 360° F. Cook in batches, turning occasionally, until golden brown (each batch should take approximately 4 - 5 minutes).
