Hush Puppies

Nothing says southern cooking better than hush puppies - served best with fried catfish and coleslaw, but also fantastic as stand-alone pick-up appetizers!

Ingredients


  • 1 C yellow cornmeal

  • ½ C all-purpose flour

  • 1 t baking powder

  • 1 t salt

  • 1 t baking soda

  • 1 egg

  • 2 green onions, sliced

  • 2 T grated yellow onion

  • 1 t garlic powder

  • ½ t onion powder

  • ¼ t cayenne pepper

  • 1 C buttermilk


Preparation

  1. Whisk together in a large bowl the cornmeal, flour, baking powder, baking soda, salt, garlic powder, onion powder, and cayenne until combined.

  2. In a medium bowl, whisk together egg, buttermilk, green onions, and grated onion until well combined.

  3. Pour the liquid mixture into the dry mixture and stir well. Consistency should be that of a thick pancake batter; adjust wet or dry ingredients accordingly.

  4. Heat 4" of vegetable oil in a large pot or Dutch oven on the stove top until it reaches 360° F. Cook in batches, turning occasionally, until golden brown (each batch should take approximately 4 - 5 minutes).
