Cornbread Dressing

I always looked forward to holidays growing up because I knew it meant Granny was making her famous cornbread dressing. Add chicken to it and you have a fantastic casserole to enjoy any time of the year!

Ingredients


  • 1 skillet prepared cornbread

  • 6 slices white bread, cubed

  • 3 green onions, sliced

  • 3 hard-boiled eggs, diced

  • 2 eggs

  • 2 T sage

  • 3 cloves garlic, minced

  • 1 T celery salt

  • 1 t poultry seasoning

  • 1 t freshly cracked black pepper

  • 3 celery stalks, sliced

  • 2 C chicken broth

  • 1 C milk

  • ½ yellow onion, diced


Preparation

  1. Preheat oven to 375°F and grease bottom and sides of a 9" x 13" glass baking dish.

  2. In a small skillet over medium-high heat, saute green onions, onions, and celery in a small amount of oil for approximately 5 minutes or until tender. Add garlic and cook for an additional 1 minute, then off the heat.

  3. In a large bowl, combine all ingredients and stir well to combine. The consistency should be very runny - almost like a batter. You may need to either add more cubed bread slices or more chicken stock to achieve the desired result. Pour into prepared baking dish.

  4. Bake for 45 minutes or until fully set (insert a toothpick in the middle to check) and bottom and sides of dish are golden brown.
