Cornbread

The tried and true way is to prepare this in a cast-iron skillet; however, you can also use a 9" x 9" square pan (either glass or metal). This may make the cook time slightly longer - just bake until nice and golden brown.

Ingredients


  • 1 C yellow corn meal

  • 1 C all-purpose flour

  • 4 t baking powder

  • ½ t salt

  • 1 C buttermilk

  • 1 egg

  • ¼ vegetable oil or bacon grease

  • 2 T sugar (optional)


Preparation

  1. Preheat oven to 425°F, pour oil into baking dish of choice (either skillet or pan) and place in the oven while you mix the other ingredients.

  2. In a medium-sized bowl, combine all dry ingredients (corn meal, flour, baking powder and salt) and blend well. Next, add egg and buttermilk and stir until fully combined.

  3. Remove baking dish from oven and pour hot oil directly into the batter and stir well. Pour batter back into baking dish.

  4. Bake for 20 - 23 minutes or until lightly brown on top.
