Banana Bread

You can decrease the sugar to 3/4 C if you prefer; however, I think using a full 1 C of sugar makes it perfect without being too sweet.

Ingredients


  • 2 C all-purpose flour

  • 1 t baking soda

  • ¼ t salt

  • 1 C sugar

  • 1 tsp vanilla extract

  • 4 dashes of cinnamon

  • ½ C (1 stick) softened butter

  • 2 large eggs, beaten

  • 2 ⅓ C mashed overripe bananas (about 4 large bananas)


Preparation

  1. Preheat oven to 350°F and lightly butter all sides of a 9" x 5" loaf pan.

  2. Combine flour, baking soda, and salt in a large bowl and mix well; set aside.

  3. In a medium bowl, cream together the softened butter and sugar until smooth. Add the beaten eggs, cinnamon, vanilla and mashed bananas and stir until well combined.

  4. Add banana mixture to dry ingredients and stir just until combined - do not overmix.

  5. Pour into prepared loaf pan and bake for 1 hour, or until toothpick inserted into the center comes out clean.
