Spinach Squares

This recipe is from my cousin Michelle Bless, and is always in short supply at family get-togethers! You can use either fresh or frozen spinach.

Ingredients


  • 2 eggs, beaten

  • 1 C milk

  • ½ stick melted butter

  • 1 C all-purpose flour

  • 1 t baking powder

  • 1 t chili powder

  • 1 t salt

  • 1 C pepper jack cheese, grated

  • 10-oz spinach, chopped



Preparation

  1. Preheat oven to 350°F and lightly a glass 9" x 13" casserole dish.

  2. In a medium-sized bowl, combine all ingredients (eggs, milk, melted butter, flour, baking powder, chili powder, salt, cheese, and spinach) until fully incorporated; pour into prepared casserole dish.

  3. Bake for 35 - 45 minutes or until nicely browned. Cool completely before cutting into squares for serving.
