A Tex-Mex classic! You can also substitute breakfast sausage for hamburger meat for a different twist. If you don't have taco seasoning mix on hand, check out my recipe for it in the "Sauces & Dressings" section of this website!

Ingredients
1 (32-oz) block Velveeta® cheese, cubed
½ white onion, diced or grated
1 (10-oz) can Ro-tel® tomatoes & chiles
3 green onions, sliced (white & green parts)
¼ C milk (add more for desired consistency)
1 lb ground beef
2 cloves garlic, minced
2 T taco seasoning mix
1 jalapeno, seeded and diced
1 t hot sauce of choice
¼ C water
Preparation
Brown ground beef in a skillet over medium-high heat. Drain grease, and return skillet to heat and add onions, jalapeno, taco seasoning mix, and water. Cook for 5 minutes, then add minced garlic and cook for an additional 1 minute.
In large microwave-safe container, add Velveeta®, milk, meat mixture, Ro-Tel®, hot sauce, and green onions. Stir well to combine and microwave in 2-minute increments, removing to stir well each time. If consistency is too thick, add milk in small increments until you reach desired consistency.
Serve hot with tortilla chips or tostadas.
