Ro-Tel® Dip

A Tex-Mex classic! You can also substitute breakfast sausage for hamburger meat for a different twist. If you don't have taco seasoning mix on hand, check out my recipe for it in the "Sauces & Dressings" section of this website!

Ingredients


  • 1 (32-oz) block Velveeta® cheese, cubed

  • ½ white onion, diced or grated

  • 1 (10-oz) can Ro-tel® tomatoes & chiles

  • 3 green onions, sliced (white & green parts)

  • ¼ C milk (add more for desired consistency)

  • 1 lb ground beef

  • 2 cloves garlic, minced

  • 2 T taco seasoning mix

  • 1 jalapeno, seeded and diced

  • 1 t hot sauce of choice

  • ¼ C water


Preparation

  1. Brown ground beef in a skillet over medium-high heat. Drain grease, and return skillet to heat and add onions, jalapeno, taco seasoning mix, and water. Cook for 5 minutes, then add minced garlic and cook for an additional 1 minute.

  2. In large microwave-safe container, add Velveeta®, milk, meat mixture, Ro-Tel®, hot sauce, and green onions. Stir well to combine and microwave in 2-minute increments, removing to stir well each time. If consistency is too thick, add milk in small increments until you reach desired consistency.

  3. Serve hot with tortilla chips or tostadas.
