If you can't source pimientos, you can always substitute with a finely diced red bell pepper sauteed in a little olive oil until softened.

Ingredients
4 C (16-oz) shredded sharp cheddar cheese
1 (8-oz) block cream cheese, softened
½ C mayonnaise
1 (4-oz) jar of pimientos
2 T grated onion
¼ t onion powder
¼ t salt
¼ t freshly ground black pepper
Preparation
Combine all ingredients and serve with crackers or breads.
