In my opinion, red onions are a must in guacamole - not only for the flavor, but for the color! Also - feel free to omit the cilantro if you wish (but we never do)! :-)

Ingredients
6 ripe avocados
¼ red onion, diced
1 t salt
½ t black pepper
2 T chopped fresh cilantro
Juice of 1 lime
2 roma tomatoes, finely chopped
Preparation
In a medium-sized bowl, smash avocadoes with a fork or potato-masher until you reach your desired consistency (chunky or smooth).
Add salt and pepper along with lime juice, onion and cilantro and stir until well combined.
Lastly, add tomatoes and gently mix so as not to smash the tomatoes.
