Super easy pick-up appetizer for any type of party! Especially nice at Christmas with the red and green from the tomatoes and basil.

Ingredients
1 French baguette, sliced ¼" thick
1 T extra-virgin olive oil
8 roma tomatoes, diced
½ C fresh basil, chopped / julienned
¼ C shredded parmesan
2 cloves garlic, minced
1 T balsamic vinegar
2 t extra-virgin olive oil
½ t salt
½ t freshly ground black pepper
Preparation
Preheat oven to 400° F. Brush 1 T olive oil on front side of all baguette slices and place on ungreased cookie sheet. Toast until golden brown for about 10 minutes, flipping halfway through. Set aside to cool.
In a medium-sized plastic container with lid, combine tomatoes, basil, garlic, balsamic vinegar, 2 t olive oil, salt and pepper and stir until well combined. Pop into the fridge for at least 30 minutes to allow flavors to marry. (NOTE: Longer is even better).
Spoon about 1 T of the mixture onto each baguette slice and sprinkle the tops with the parmesan cheese. Serve.
