Antipasto Bites

This is a crowd pleaser for sure...the jarred pepperoncinis are fairly hot, so adjust to your taste preference. Also tastes great served either warm or cold.

Ingredients

  • 1 t butter

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 can artichoke hearts, chopped

  • ¼ C plain bread crumbs

  • ⅔ C grated cheddar cheese

  • ⅔ C grated parmesan cheese

  • ⅔ C grated Swiss cheese

  • 4 eggs

  • 1 t oregano

  • 1 t each of salt and pepper

  • ¼ t tabasco sauce


Preparation

  1. Preheat oven to 350°F and lightly grease a 9"x 13" glass casserole dish. (NOTE: Using a 9"x 13" will yield 32 thinner squares; using a square 8"x 8" or 9" x 9" instead will yield 16 thicker squares).

  2. Saute onion and garlic in melted butter in saucepan over medium heat. Remove and let cool for 10 minutes.

  3. In a bowl, beat together eggs and add bread crumbs, tabasco, oregano, salt & pepper. Add to this the cooled onion/garlic mixture, all the cheeses, and chopped artichokes; stir well.

  4. Pour mixture into prepared dish and bake for 30 minutes or until set and top is golden. You may also broil briefly for a few minutes.

  5. Cut into squares and serve warm.
